Strawberry Scones: a 10 min prep high tea!

The fact that scones are so easy and quick to make and that always they turn out to be delicious never stops surprising me! These strawberry scones are not the exception to that rule! And you can pretty much use any kind of seasonal berries you like.


Recipe


How much time you need?

  • Cooking: 10 minutes

  • Baking: 20 minutes

Ingredients:

  • 3 cup self-raising flour, plus extra for dusting

  • 1 cup thickened cream

  • 1 cup strawberries

  • 1 tsp vanilla bean paste or vanilla essence

  • 1 cup cold lemonade

  • 1/2 tsp fine salt

  • whipped cream and jam, to serve

Method: 1. Preheat oven to 200°C. Grease and line baking tray with baking paper. 2. Grossly chop the strawberries and reserve.


3. Stir flour, cream, lemonade and vanilla in a bowl until just combined. Add strawberries and gently fold through.


4. Turn out onto a floured surface. Gently press out until 5.5cm thick. I usually use two sheets of baking paper so the dough does not stick to my hands. Use a 5 cm plain cookie cutter, dusted in extra flour, to cut into rounds.


5. Place rounds on the baking tray. Bake for 20-22 minutes or until lightly golden.

6. Cool slightly on cooling rack and enjoy with a cup of tea or coffee.

Tip: Halve them and serve with whipped cream, jam and extra chopped strawberries =)
