Cheese Scones

The perfect match for a cup of coffee in a cold winter day. These cheese scones are scrumptious and so easy to make! I made these on a cold but sunny Saturday day and it reminded me of my days at Uni. The cheese scones were my favourite snack in between classes. I remember I used to ask for double shot coffee, specially before Statistics and Probability class. Extra caffeine was a must! LOL

The texture is amazing and the melted cheese… well, it’s melted cheese! It doesn’t need a fancy introduction, right? Who doesn’t love melted cheese? Give them a try! You’ll be surprised how easy to prepare these scones are! You can store them in an airtight container for up to two days and reheat them in the grill or in the toaster for one minute.

How much time do you need?

  • Preparation time: 20 minutes

  • Cooking time: 20 minutes

  • Total time: 40 minutes

Material:

  • Mixing bowl

  • Spatula

  • Cheese grater

  • Kitchen scale

Ingredients (makes 6)

  • 250grs plain flour

  • 50grs butter at room temperature

  • 5grs fine salt

  • 75grs cheddar cheese, grossly chopped in cubes of about 0.5cm

  • 65grs grated parmesan cheese

  • 50-100ml milk

Tip: Do you have a microwave and don’t want to wait for the butter to reach room temperature? Dice the butter in cubes of about 1.5-2 cm and put in the microwave for 15-20 seconds.

Method: Bring together flour and butter using your hands until the mixture looks granny and the texture is sandy. Add the cheese and mix with one hand and add drizzles of milk as you go until mixture comes together. The texture should be granny and chunky but the dough should stick together nicely. Place the dough between baking paper forming a disc of about 12cm diameter and press on top with a rolling pin to spread evenly. Remove the top baking paper, cut into triangles using a sharp knife (cut it as if you were cutting pizza slices). Place the scones in a baking tray lined with baking paper and bake for 15-20 min until lightly golden at 200°C. These are best eaten warm with cup of coffee 😋
