Poached Pears: a pastry chef's staple

These good looking poached pears are a quick and easy dessert. Enjoy it on its own or with a scoop of vainilla or chocolate ice-cream. Also, they are perfect for preparing many different types of sweet tarts.

Recipe

How much time will you need?

Preparation time: 10 minutes

Cooking time: 15 minutes

Resting time: 2-3 hours

Total time: 2-3 hours 25 minutes


Equipement:

Big sauce pan

Fruit peeler or a sharp knife


Ingredients:

- 3 medium to big pears

- ½ stick of cinnamon

- 1 star anise

- 5 cups of water

- 100 grs white sugar

Method:

Peel the pears and lightly brush with lemon so they do not oxidize. Bring water and sugar to boil in a big sauce pan. Once it has started boiling, add the cinnamon and start anise and the pears. The liquid must cover the pears. Cook for 10-12 minutes. Use a think sharp knife to test if they are tender. Do not over cook them as they will continue cooking while they cool down.

Remove from heat after 10-12 minutes and let it cool down for 2-3 hours. Place in the fridge.

Poached pears are perfect for preparing desserts like sweet tarts frangipane or a rustic galette; you can also use them in salads. Enjoy them on its own or with a scoop of vainilla or chocolate ice-cream.

They can be kept refrigerated for up to 3 to 4 days, the pears should be covered by the poaching liquid.
