Preparing homemade granola is easy and fun! Homemade granola is highly nutritious and it’s super healthy as it doesn't have any preservatives or artificial additives. I enjoy a bowl of delicious cereal in the morning but it has to be really good! I’ve tried almost all types of commercial cereals and granolas available in supermarkets but none taste like this homemade granola. It is absolutely worth the efforts!... well, not too much efforts to be honest as it’s ready in less than 1 hour! Amazing! 😊

Material:
· Large baking tray
· Baking paper
· Spatula
· Large mixing bowl
· Kitchen scale
Ingredients:
· 380 grs classic rolled oats · 1 cup coconut flakes or shredded coconut · 1.5 cups raw nuts · 1 teaspoon cinnamon · 1/2 teaspoon salt · 1/2 cup natural sweetener (honey, maple syrup or agave)
· 1/3 cup fat (canola oil or coconut oil) · 1 teaspoon vanilla essence
· To finish: 1/2 cup dried fruit
Tips: Use whatever you have in your pantry 😊 Variety makes it more delicious! Sometimes I buy trail mix that comes with both nuts and dried fruit and separate them. It only takes 5 minutes.
Raw nuts and seeds: almonds, walnuts, cashews, macadamia, sunflower seeds, pumpkin seeds, pecan, peanuts, hazelnuts.
Dried fruits: raisins, currants, goji berries; dried berries, apricots, mango, pineapple, apple, orange, cherries, prunes.
Flavouring: Almond, orange, lemon, coconut, pumpkin essence, ginger.
Method:
Preheat oven to 150 ºC. Line a baking tray with baking paper. In a large bowl combine oats, nuts and seeds, coconut flakes, cinnamon and salt. Do not add the dried fruit yet.
Tip: I always leave the dried fruit to add in the end. If you add the dried fruit and cook it in the oven, it will be rock hard and nothing pleasant to your teeth! Always add the dried fruit in the end, when the granola has cool down completely.
Combine the wet ingredients: sweetener, oil and the essence. Add to the large bowl with the dry ingredients and mix well using a spatula. Spread the granola on the baking tray and bake for approximately 45 minutes. Toss 2 to 3 times while cooking. This will help the granola to cook evenly.
Tip: If you are using a convection oven, those that do not cook evenly in the centre, leave an empty space in the middle, like the one I show in the pictures. The granola will cook evenly in the borders of the baking tray.
Let cool down in the baking tray for at least 2 hours. Stir in the dried fruit and store in an airtight container. It’s better consumed within 2 weeks.
Serve with fresh milk or yogurt. Add some fresh fruit on top to finish. Add extra honey or sirup if you like! And Enjoy!
Tip: Do you like granola with big clusters? Beat 2 egg whites until white and frothy (don’t go too far, you are not looking for meringue consistency) and add to the final mixture, mix well, before transferring to the baking tray. Leave an space in the centre and do not toss. Cook for 45 minutes. Turn off the oven and leave the door cracked open so the granola cools down slowly. Once completely cool, break into clusters and store in an airtight container.
