What is better for this Sunday lunch than ravioli (or sorrentinos) filled with melting mozarella cheese and smoked ham? In my world?, nothing! =) This pasta is incredible easy to make and it is delicious! A classic italian tomato sauce is the perfect match for this pasta so don't overthink it.
Recipe
How much time do you need?
Preparation time: 2 hr
Cooking time 15 min hr
Total time: 2 hrs 15min
Ingredients:
For the dough
250 g flour 0000
2 tbsp. of oil
1 tsp. of salt
1 cup of water
For the filling:
500 grs muzzarella cheese (a bar)
200 grs smoked ham
Black pepper and dried basil
For the sauce:
250 ml Traditional italian tomato sauce (1 onion, 2 garlic, 500gr tomato, herbs, salt and black pepper)
250 ml Cooking cream
Method:
For the dough
Put the flour together with the salt in a bowl and in the center add the oil and boiling water at once.
Mix on the table, knead until you get a soft and smooth bun. Let rest for 30 minutes.
For the filling:
Cut sheets of mozarella cheese of 1 cm. Using a roun cookie cutter of smaller diameter than the ravioli cutter, cut circules of the mozarella and ham as shown in the picture.
Fill the pasta sheets leaving a 4-5 cm between each ravioli. Cover with another pasta sheet and seal pressing gentle while removing the air trapped inside. Use a bit of watter to help the sealing, if needed.
Dump them in batches in boiling salted water and once they rise to the surface, remove with a slotted spoon.
Sauce:
Prepare a classic italian sauce with salted onion, garlic and tomato sauce. Add oregano and basil. Season with salt and pepper. Tranfer the cooked ravioli to a pan with the sauce and cook for another 3-5 minutes. Add the milk cream. Cook for 1-2 minutes. Serve inmediately.
