These little cakes are super fluffy and light and they are the perfect pairing for a cup of tea. If you don’t have a Bundt mold, you can use a regular muffins mold or you can just bake one big cake! I made these for a Morning Tea I hosted at home to raise funds for cancer research for Cancer Council Australia and they were a total success! The cherry on top of my homemade high tea... 🙂

Material:
Standing or hand mixer
Medium mixing bowls
Spatulas
Sieve
Bundt mold (or muffins mold or cake baking pan)
Ingredients (make 18):
170g butter, at room temperature or 140 ml coconut oil
190g white sugar
180 cc coconut milk or coconut cream
60g fine grated coconut
230g plain flour
1.5 teaspoon of baking powder
1/2 teaspoon salt
3 eggs
To decorate:
Coconut flakes just roasted in the oven or in a frying pan over low heat
Powdered sugar 150 g
Coconut milk 25 cc approx
1/2 lemon squeezed
Dried rose petals (optional) or other dried edible flowers
Method:
Integrate flour, baking powder and salt in a medium mixing bowl, preferably using a sieve and reserve.
In a large mixing bowl, place the butter (at room temperature) and the sugar, beat until creamy, add the eggs, one at a time, and beat until incorporated. Add the following ingredients and mix gently with a spatula: half the coconut milk and half the flour, mix for a few seconds, add the grated coconut and continue with the remaining milk and the remaining flour. Pour into the molds, previously buttered and floured. Take to a preheated oven at 160 degrees C, for approximately 20 minutes or until the wood pick comes out clean. If you prefer to make just one large cake, the baking time should be approximately 50 minutes at 160 degrees C.
Let them cool on a coooling rack for at least 10 minutes. If you made the big cake version, you should wait at least 30 minutes. Prepare the icing by mixing coconut milk, lemon with powdered sugar until well-integrated. Bathe the small puddings (they must be cold, if you bathe them hot the icing will not adhere well and it will slide off), then add the coconut flakes on top and decorate (optional) with some dried rose petals (ie rose tea petals).
